This is my all time favourite granola, it's based on a recipe that was used by the wholefood company, Suma, about 30 years ago. I loved their 'Nutty Crunch' as a kid and despaired when they stopped making it.

I switched to various granolas from Jordans (and many others) for a while, but they were just not the same. Eventually I managed to track down an image of the ingredients label for Nutty Crunch and I used that as the basis for this recipe, which I've refined over the last decade.

Be warned though this is a high energy granola, which is just what I need for my active lifestyle. It has the benefit of zero truly empty calories. The fats are all organic and minimally processed, the sugars all provide nutrients as well as sweetness, the nuts are added after cooking to retain their nutritional value.

I describe it as 'mostly organic', because sourcing reasonably priced organic nuts is impossible here. However the processed/concentrated ingredients are organic as are the oats. The extra cost of going organic for these ingredients is low and worth it in my opinion.

Ingredients for one batch

Directions

  1. Combine the oats in a mixing bowl (you can vary the proportions of porridge and jumbo to your taste)
  2. Melt the butter, coconut oil, molasses and malt extract over a very low heat (don't allow to boil)
